Planet Hollywood's Captain Crunch Chicken
Your kids (and guests!) will absolutely love the crunchiest chicken on the Planet!!
- 4lb chicken breast (skin removed), cut into 1oz tenders
- 4 cups Captain Crunch cereal, coarsely ground/ crushed
- 3 cups corn flakes, coarsely ground/ crushed
- 2 eggs
- 2 cups milk
- 2 cup all-purpose/ plain flour
- 2 teaspoon onion powder
- 2 teaspoon garlic powder
- 1 teaspoon black pepper (freshly ground, if you have it)
- vegetable oil for frying
In a large bowl, combine the corn flakes with the Captain Crunch.
In a small bowl, beat the eggs with the milk.
Set aside.
In a medium bowl, combine the flour, onion powder, garlic powder and the black pepper.
Set aside.
Dip each chicken tender into the seasoned flour, ensuring all sides are evenly coated.
Lightly shake off any excess flour.
Then dip the chicken tenders into the egg mixture.
Finally, dip into the cereal mixture and ensure evenly coated.
In a large heavy skillet over a medium to high heat, heat the vegetable to 320 degrees F (or ... degrees Celsius).
Carefully add the coated chicken pieces to the hot oil.
Cook for approximately 2 minutes on each side, or until cooked through and golden brown.
Drain onto kitchen paper towel and serve while still hot with your favorite dipping sauce (sweet & sour, Creole mustard, aioli, barbecue etc).
